Pizza Made to Order
Dale and I both enjoy pizza. I just enjoy it a little differently than he does. Today I decided to make homemade pizza MY WAY! Dale's first comment was, "Is this healthy pizza?" I said "of course!" and served him up his first 2 slices.
I didn't go as far as making my own crust, but did choose a whole wheat crust that was extremely easy to use. I made 2 pizzas. The first was ground turkey with low fat parmesean cheese, and the second had chicken, broccoli and assorted mixed veggies. I had a leftover bag of frozen mixed veggies so I decided to use it on the top of the pizza. After cooking the meat, I seasoned them both with oregano, minced onion, salt and pepper, and Mrs. Dash pizza seasoning. They were super easy and tasted great. Even Dale went for a 3rd piece. Great success!
Yummy pizzas- plenty left over for lunch tomorrow!
Taking the Easy Way Out!
Sometimes you just have to take the easy way out! A client of mine gave me the idea for making dinner easier to prepare. I know I have love to cook, and yes, I am a huge advocate of picking out your food at the grocery store. That being said, the idea that was given to me sounded too good to be true!
His suggestion was to try Social Suppers. They are located all over the KC area and it's as easy as picking out the meal online, ordering it, cooking it, and putting it together. Or, you can actually go into the store and put it together yourself with the ingredients they have available (I think I'll try this next time). Once you have ordered it, you just pick up the un-cooked, un-put together meal, cook it, and put it together on your plate! Yep- sounds extremely lazy, but I had to at least try!
I let Dale pick out what the meals, because this is essentially for him to pack for lunch. He picked out a chicken pasta, chicken wraps, and potato skins. I decided to cook the chicken pasta and potatoes for him tonight. I'll admit that I was a little skeptical, but when I got the chicken out of the ziploc baggy, it actually looked good!! The package came with a baggy of noodles, boneless skinless chicken breast (uncooked), and the marinade to put on top.
I decide to steal a piece of the chicken to make for myself for dinner tonight. So I put it together to create a healthier option. I cooked the chicken breast as instructed, and ate it with brown rice and veggies, instead of the pre-packed marinade and spaghetti. The chicken was already seasoned with rosemary and was delicious!
Long story short- it was worth a try and was very yummy. We'll see how much Dale likes it.

Fast and Easy Chicken
I haven't always enjoyed cooking, mainly because I was never any good! Since I started working at TwinFitness, I have learned more about food and cooking than I can even begin to describe. From everything I have learned, the most important concept is: if you are going to have a healthy and clean diet- you MUST learn to cook! Going out to eat may be the easier choice, but cooking your own food is not only very satisfying, but it allows you to prepare and season the food any way you want. Once you learn how to prepare the food, it is just a matter of putting things together to create your meal! Not everyone may enjoy this as much as I do, but hey, it's worth a try!!!
One of my favorite ways to cook chicken is in the oven, wrapped in parchment paper. (My mom asked me why I chose parchment paper and my answer was, "Because that's how Martha did it!") I set my oven to 400 degrees, and place the uncooked boneless skinless chicken breasts in the parchment paper. Before I cook it, I make sure and measure the chicken (on my food scale) so I don't eat more than I easily could. On top of the chicken, I season it with an array of seasoning sprinkles, and top it with either frozen or uncooked fresh veggies. The veggies cook right along with the chicken, and after about 30minutes in the oven, it all comes out hot and ready to eat! This is also good for picky husbands, they can season theirs how they want. It's also a good meal if you like leftovers!
I put the boneless skinless chicken breast pieces at the bottom, and cover them with veggies. Be sure to dice your chicken before cooking it. This helps it cook faster, and makes it easier to eat. |
